After deviating from smoothie bowls for five days, I finally got the chance to whip out my blender this morning! Although my parents are used to my noisy, early-morning blender blasts, we had company and no time to deal with punctured eardrums. Furthermore, experimenting with new breakfast recipes is quite exciting, so I loved the little break. I made vegan omelettes, lemon poppyseed pancakes, and coconut yogurt porridge… recipes coming soon!! But, I can’t deny I was missing the ring of my blender and craving something cool and refreshing because this heatwave is pretty relentless. Fresh peaches did the trick!
Peachy Keen Smoothie
Ingredients:
1.5 frozen bananas
A few ice cubes
2 peaches
1 carrot
2 dates
1/3 cup coconut milk
Instructions:
- Combine and blend all but 1/2 of one peach. Simply cut a bunch of mountain peak shapes horizontally and keep half of the fruit for a pretty look.
- Top with chia seeds, craisins, wheat flakes, and coconut.
- Enjoy and say, “I’m keen on this!!”
