Because it’s not just THURSDAY, silly, it’s THIRSTY THURSDAY– the latest addition to Enough Elizabeth series posts!!

I have yet to arrive on campus, but I’m already excited for my last Thursday afternoon class to end and for Thursday nights to begin!
To be honest, though, I’m MORE excited for Thirsty Thursday morning-smoothie posts. Mmmhm, das right- before we can head out into the loud, sweaty, chaotic abyss that are Thirsty Thursday “gatherings,” we must kickstart our mornings with nutritious goodness.
I hope you’re parched because Thirsty Thursday on Enough Elizabeth means you’ll be filling your portion cups with JUICE shots, and red solos with SMOOTHIES!!
Coco Nut Nectarine Smoothie
1/2 cup strawberries
1 scoop vanilla protein powder
1 tbsp nut butter
1/2 cup coconut water
Blend and top with more nut butter, pb2, coconut flakes, and grapes because grapes rock. But, please- if only for the sake of aesthetics, don’t put it in a red solo! 😉
