Pumpkin Pear Smoothie Bowl

What time is it?!

Time for another pumpkin recipe!

If I’m being honest, every time I’ve turned plain pumpkin into pumpkin perfection this autumn I’ve felt just like Cinderella’s fairy godmother when she went carriage crazy. Turning something good (like pumpkin) into something magically fantastic (like a pumpkin smoothie, a pumpkin pudding … or a pumpkin carriage) is just so … bibbidi bobbidi boo!

With Thanksgiving EXACTLY one week away, it’s time to start pumping out the pumpkin recipes from dawn to dusk. I’ve started with this Pumpkin Pear Smoothie Bowl!

Ingredients:

  • 2 frozen nanas
  • 1 pear (1/2 for topping)
  • 1/2 cup canned pumpkin
  • 1/2 cup coconut milk
  • 1/4 cup vegan chocolate chips
  • 2 tbsp coconut flakes
  • 1 tbsp chocolate or nut spread (for topping)

Instructions:

  1. Blend all but 1/2 pear, coconut flakes, and spread.
  2. Top with remaining ingredients and whatever else floats your boat!

Stay fly, pumpkin pie!
